In 2014, childhood friends Alex Robinson, Tyler Cullitan, and Neal Bassett walked away from their desk jobs to open a food truck. From that came Happy Lobster, who has been serving Chicago's premier lobster roll since 2015.

All of the lobster is sourced directly from producers in Maine, and while the burger bun they serve their lobster rolls in may break tradition, the quality is undeniable.
